It is finally my favorite season: CRAWFISH.
For those of you who don’t know how it works, the season usually runs from Februaryish to Juneish. And yes, this is a real season and not just something I made up (which could seem likely). Crawfish harvesting begins in the Spring, which is why they tend to be better in the early Spring months.
Last weekend, I enjoyed my first crawfish of the year. Several friends took on the task of boiling these live little guys, plus an impressive array of vegetables. I would be amiss to say that everything wasn’t absolutely delicious. Now I’m just counting down the days until round two.
